Tropical Breakfast Pizza

(serves 6)

Base:

2 vanilla & almond THK protein cookies

1/2c chopped almonds

1/2c sprouted buckwheat

1/2c desiccated coconut

6 fat, moist medjool dates

Topping:

250ml Coconut yogurt

Kiwi

Mango

banana

desiccated coconut

macadamia nuts or Brazil nuts

Combine base ingredients in a food processor until it all clumps together and is sticky.  Press into the base of a springform pan.  Put in the freezer for 30-45 minutes.  When it’s firm top with yogurt and chopped fruit and nuts.  You may stick it in the freezer again for 10 minutes or so.  Store in the fridge.  This breakfast pizza feels like a real treat but don’t be fooled – it still has protein, good fats, fibre and vitamins.  Pretend like winter isn’t coming and enjoy this tropical treat!
